Smoky Honey Almonds

This is what you need from Usk Farmers' Market

 

  • 100g/ 3 ½ oz Usk Fair Trade whole blanched almonds
  • ½ tsp Usk Fair Trade Smoked Paprika
  • 1 ½ tsp Black Mountains Smokery Rape Seed Oil
  • 1 tsp Usk Fair Trade sea salt flakes
  • 2 tbsp Beechtree Bees honey

  1. Pre –heat the oven to160⁰C/325⁰F/gas mark 3. Put the nuts on a baking sheet lined with non-stick baking parchment and cook for 10 minutes ensuring they don’t scorch.

  2. Put the hot nuts in a bowl.

  3. Sprinkle the paprika over the nuts, pour over the rapeseed oil and spoon over the honey.

  4. Spread the coated nuts over the non-stick baking parchment and return to the over to 2-3 minutes, watching to make sure that they don’t burn.

  5. Leave the nits to cool for a couple of minutes. Sprinkle with sea salt and use 2 fork or spoon to stir around in the honey mixture. Spread the nuts out so that they aren’t touching and leave to go completely cold. Sore in an air tight container.

Variation : Substitute unroasted peanuts, cashew nuts or if you really want a treat macadamia nuts for almonds. Watch macadamia nuts very carefully as they have a high oil content and will burn very easily.

Very nice indeed with an ice cold dry sherry. Or a cold beer. Or just on their own.
